Bean Salad, Eggplants, Corn, Heirloom Tomatoes

This weekend I bought several kinds of shelling beans and made a simple warm bean salad -- delicious! I'm taking advantage of the season to enjoy eggplants, corn, heirloom tomatoes, peppers, lima and other beans, squashes, and all sorts of greens. There's so much good produce around that it's possible to slip into taking it for granted, but the first grapes that appeared in the market this weekend reminded me that time is passing and that the slide away from peak season is coming fast. September will be arriving next week! It's really time to start preparing heirloom and other tomatoes for the freezer, not to mention basil and other herbs in olive oil.
